Katto Carving knife

This knife is both beautiful to look at and of superb quality. The steel is AUS-10, which I have never used before. It remains to be seen how well it holds its edge but early indications are favourable. The standard of manufacture is first class as is the finishing. The balance of the knife is perfect. I am sure that my wagyu beef tastes so much better from being carved with this knife!
