I used to live in NYC in Gramercy park and frequented your coffee shop there with the open skylight. I am now in LA and purchased a Profitec dual boiler and this roast is perfection and reminds me of the days spent in your coffee shop. I like brewing Sombra using Hario V60 Neo with Hario Switch. Gives me full body traditional Americano-like pour over. Sweet with no acidity (sorry, I hate acidic coffee).
