Great for Stainless Steel cookware.
I am switching over to stainless steel cook ware from old non-stick stuff, and find that I need to know temperatures of the pan surface for certain foods. The Pro-surface thermapen is the only game in town that I found can do this. The infrared thermometers are great for many things, but they cannot properly read stainless steel due to the reflectivity of the pan surface. Fortunately the pro-surface thermapen works great on stainless steel.

Worth the extra $$
I have an IR thermometer gun. Metals like stainless throw it off due to mirror like reflectivity. This works on contact every time on every material. It works fast & has Thermoworks famous accuracy. My only complaint is my kitchen's lighting makes it hard to read without a 🔦.

Expensively dim
I purchased the Pro-Surface Thermapen for a stainless steel griddle. While I don't have a means of verifying that temps are accurate, it seems to work for my needs. However, this is an overpriced temp gauge with a very dim LCD screen. For the price, the screen should be lit. Unfortunately, there is no competition for this device yet -- which may explain the price.
