My Brundo Berbere Cocoa Mix Cookies
I was looking for cocoa to make cookies and while I was buying my favorite Brundo savory spices — Berbere, Awaze and Makulaya — I saw they carry a Berbere Cocoa Mix. I now have it as a staple in my pantry and often bake my own cookie recipe using it. Here is the recipe for my slightly spicy, elegantly delicious cookies that are the perfect dessert for a meal like Shrimp or Beef Stew using Brundo spices.
POLLY’S BRUNDO BERBERE COOKIES
Preheat oven to 350
Line baking sheets with parchment paper
Have Maldon Sea Salt Flakes on a dish to use
Blend together:
1 stick unsalted butter
1 egg
1/3 cup Brundo Berbere Cocoa Mix
1/2 cup brown sugar
1 and 1/3 cups AP flour (I use half Red Fife which is the best if you find it)
1/2 tbsp. Vanilla
1/2 tbsp. Brewed coffee
Make rounded cookies using a tablespoon or a small ice cream scoop. Dip one side into the Maldon Sea Salt Flakes. Place on baking sheets, salt side up. I only bake 6 cookies at a time.
Bake for 10 minutes. Let cool on sheets. Store in a closed container.
