Eggplant Parmigiana

My Cuban mother in law living in Florida absolutely loved the eggplant parmigiana!! She would cut up squares at night as her vegetable and ate it for dinner!! She is an Italian at heart with all the Italian food she loves !!!

Your food is fantastic. But I wish you guys would lower your minimum purchase to 140, that way I could get four entrées without having to spend an extra $20 or so on something else.
