Now Roasting: Panama Geisha Mama Cata Estate – Anaerobic Natural, from one of the original Geisha farms in Panama. More than 50 years ago, long before Geisha started breaking auction records, Mama Cata was quietly growing the variety on the volcanic slopes of Boquete, alongside legends like Hacienda La Esmeralda and Don Pachi.
Paradise’s relationship with Mama Cata goes back more than fifteen years. Our founder @rmiguelmeza first visited the estate in 2009, and since then we’ve roasted many of their finest lots—from classic honey Geishas and Mokkita naturals to experimental “Geisha Champagne natural ” and maybe the only wet‑hulled Geisha ever produced in Panama. This new lot from the Cable 1 & 2 blocks of the farm continues that collaboration.
Harvested January 17, 2026, the cherries went through a 48‑hour anaerobic fermentation and 27 days of raised‑bed drying.
In the cup: hibiscus tea, bergamot, blueberry, milk chocolate, jasmine – bright, sweet, and intensely fragrant from hot to cool. A beautiful example of Panamanian Geisha that reminds why these coffees became famous in the first place.

New Decaf!

Mexico Esmeralda Decaf

Our newest decaf release has arrived.
Natural process coffees sourced from smallholder farmers in Southern Mexico and decaffeinated using the Sugarcane EA process, this coffee delivers the sweetness and balance we look for in a great everyday cup.
Expect notes of macadamia, green apple, lemon, and vanilla with a smooth body and vibrant acidity.
Unlike our Moonbow Decaf blend, which was developed for espresso performance first, Mexico Esmeralda was roasted lighter with filter brewing in mind and shines as a pour over, drip coffee, or Aeropress.
For those looking to enjoy great coffee later in the day—or simply drink less caffeine without sacrificing flavor—this is one of our favorite options.

Now roasting: Kona K7 Peaberry from Noelani Farm.

This release is a more classic expression of high-elevation Kona coffee — refined, balanced, and structured, with notes of red apple, cream, caramel, toasted nuts, and soft florals.

Peaberries occur naturally when a coffee cherry develops a single rounded seed instead of two flat-sided beans. Typically only a small percentage of each harvest becomes peaberry, and these lots often show enhanced clarity and acidity in the cup.

Grown at approximately 2,500ft in Hōlualoa and processed using a traditional washed method, this coffee highlights the elegance and sweetness that made Kona coffee famous.

Available now in limited quantities online and by the cup at @paradisecoffeehilo

Roasting today: Ka‘ū Pacamara Lactic Natural.

Grown by the Koi family of Elepoki Farm near Pāhala at 2,100ft above Wood Valley Road, this coffee was processed using our lactic natural fermentation method that produced one of the most intense and aromatic Hawaiian coffees we’ve tasted.

Notes of fig, cinnamon, amaretto, cola, dried fruit, and rose.

Only 8 pounds were produced. 2lb of which were a competition entry.

This lot was one of the entries we produced for the 2026 @hca_coffee @thebestofhawaiicoffee cupping competition. Last year’s winning coffee was a Pacamara grown just below this field.

This release was offered exclusively to customers who regularly purchase our rarest coffees and Geisha lots, and will not be available for general online sale.

We will have a very limited number of cups available at @paradisecoffeehilo.

Low Caffeine Kona Laurina — one of the rarest coffees grown in Hawai‘i.

Our own @rmiguelmeza selected Laurina to plant at @huladaddycoffee farm in 2009 after obtaining seeds from the Hawaii Agriculture Research Center collection in Kunia. Seeds from those original trees are now being grown by @konafarmdirectcoffee , where this lot was produced.

Laurina (Bourbon Pointu) is prized for its naturally low caffeine (1/2 of other arabica cultivars), elegant cup quality, and tiny pointed seeds — but yields are extremely low, making it rarely grown commercially.

This Champagne Natural lot is sweet and tea-like with notes of red oolong tea, strawberry, watermelon, pistachio, and vanilla and milk chocolate

Very limited production.

Want to learn more about the coffee varieties grown across Kona and Ka‘ū? Check out our new blog post. (Link in bio)

While Typica is still the majority of coffee grown in Kona, maybe cultivars have been introduced on a small scale at farms for improved cup quality and disease resistance. Many of these our own @rmiguelmeza is responsible for first trialing in Kona at @huladaddycoffee Varieties such as SL34, Mokka, Laurina. These varieties have slowly expanded to a handful of farms and will likely always been in limited supply.

Disease resistant Sarchimor strains introduced since coffee leaf rust disease arrived to the island in 2020 represent the future for sustainable large scale production of coffee in Hawaii.
