So - two years ago I was searching the net to learn how to brine and cook a turkey. A many of you know, you can get lost in the jungle of spices and ideas. I tried making my own but there is an art to doing this - and I'm not a spice artist. Besides, you can spend a lot of time and a little money trying to get it right. I went to Amazon and went through the pictures and the number of people who liked this and that - and I clicked on Kosmos. I liked the sound of the name. I Bought the turkey brine and a bottle of Dirty Bird and Killer Honey Bee Chipotle. Loved the Honey Bee. It was just sweet enough but not overwhelming The turkey worked out pretty good as after I brined the turkey, I smoked it. I have three go to's now. Dirty Bird - Killer Honey Bee and Cow Cover. Also I like the Cajun chicken injection. My wife likes the original chicken injection so I stock both. I might add that I sprinkle the Killer Honey Bee on mixed nuts. I just tried that the other day and now, I'm going to have to watch how much mixed nuts I eat. Well - I sticking with Kosmos -( good recipies on the site too) - no more hacking my way through the jungle.

I use this over the top of cow cover on beef ribs, also great over CookShacks spicy chicken rub if you looking for some sweet over some heat.

We especially like it on grilled or baked chicken that has been marinated for several days. Leftovers make fantastic chicken salad.
